My name is Samir, and I’m the founder of Carisma Catering.

I’m half Italian and half Moroccan, and I’ve had the luck and pleasure of growing up in two cultures renowned for their cuisine — and for the artistry they bring to even the simplest recipes.
(Also the reason for “CARISMA” and not “CHARISMA“)

Armed with this solid culinary foundation, I joined the hospitality industry 10 years ago — first in Italy, then in the UK. I’ve worked all across London and worn many hats, from front-of-house waiter to chef in the kitchen, getting to know the industry in its entirety.

While it’s been a fun ride and a huge learning experience, something kept bothering me: in many of the places I worked, the act of preparing and serving food had become an industrial process.
The focus was often on getting food out as cheaply and quickly as possible — like a production line — and somewhere along the way, the care and craft that make food truly good were lost.

You know, the kind of food your grandma used to cook. She didn’t care how long it took (okay, maybe she cared about the cost 😄) — her goal was to put all the care and attention to feed you and nourish you.

Growing up in Italy, I couldn’t help but feel a bit ashamed… What would my Nonna think?

That’s why I brought together my heritage, hospitality experience, and a team that shares my values — and started Carisma Catering.

We strive for a near-zero-waste, eco-conscious approach. It’s easy to overestimate quantities and create waste at large events — we make it a point to minimise this, and we find smart, efficient ways to manage leftovers and reduce impact.
